Bargain Meal of the Week: Spinach Salad with Chicken

Meet Jennifer, The Lady Riposter. She’s a self-confessed foodie I recently bumped into over at $5 Dinners when I noticed she puts together a Bargain Meal of the Week. She peruses the Cub ad, notices sale items and puts together a recipe based on them.  Featuring that recipe seems like a great fit for Pocket Your Dollars, since many of you shop at Cub and I consistently get requests for more money-saving food and recipe tips. 

With that, you will likely see more of Jennifer and her Bargain Meal of the Week, but for now enjoy this Spinach Chicken Salad recipe:

Spinach Salad with Chicken

1 bag baby spinach (on sale 2/$5)
1/2 pkg. blueberries (on sale 2/$5)
Grilled chicken breast (on sale $3.69/lb or $1.88/lb at R)
Balsamic vinegar
Olive oil
Salt, pepper or herbs, as desired for dressing
Other toppings of your choice, such as nuts or goat’s cheese crumbles.

Wash and dry spinach. Put a handful on a plate and top with blueberries and nuts. Slice the chicken breast and lay on top of salad.

Pour olive oil and balsamic vinegar into a small jar. Add salt, pepper and herbs, as desired. Put the lid on the jar and shake well to mix. Pour dressing on salad and serve!
